Guacamole - Quite las semillas de los jitomates, luego corte la pulpa en brunoise. - Pique el cilantro. - Pele la cebolla y córtela en brunoise al igual que el chile. - Corte el aguacate al medio, quite el carozo y retire la pulpa. - Coloque en un molcajete una parte de la cebolla del cilantro y el chile, muela y añada la pulpa de aguacate, el resto de cebolla, cilantro y chile, agregue el jitomate, sazone con sal y mezcle. Chips de camote betabel y plátano - Corte el camote en finas laminas al igual que los plátanos - En una cacerola con abundante aceite caliente fría las laminas de camote y plátano, luego retire y escurra sobre papel absorbente. Sazone con sal. Armado - En una sartén caliente con aceite de oliva incorpore los dientes de ajo y la cebolla, una vez transparente agregue los chiles, la zanahoria, el apio y el pimiento rojo, agregue las flores de coliflor, los bastones de pepino, las bayas de enebro, hojas de laurel, pimienta, sal, mejorana y orégano, por ultimo incorpore los nopales y el vinagre, cocine unos minutos y deje evaporar el liquido de los vegetales, luego añada el agua y la hierbabuena, tape la cacerola y una vez que rompa hervor agregue los camarones, tape nuevamente la cacerola y retire del fuego. Presentación - Sirva en un plato una porción de escabeche. - En otro plato sirva el guacamole y decore con los chips de camote y plátano. Programa: Como Gustes
